Instructions
  1. In a large cast iron skillet, heat oil over medium-high heat. Sear all sides of roast. While meat is searing, peel and cut jicama into chunks.
  2. In a large crockpot, place seared roast, jicama, beef stock and spices.
  3. Cook on low for 6-8 hours. Meat should be tender and pull apart easily.

Instructions
  1. Preheat oven to 400ยฐ
  2. Peel and slice jicama into fry-like strips.
  3. Place in a medium bowl. Pour oil over jicama and coat well.
  4. Place fries on a parchment lined baking sheet in a single layer.
  5. Bake 25-30 minutes, turning halfway through baking.

Mashed Cauliflower
  1. Bring a large pot of water to a boil. Add the cauliflower and boil for 15 minutes or until tender.
  2. Drain cauliflower and place in food processor.
  3. Add melted butterand galic powder to processor and pulse several times until well combined.
  4. Add parmesan cheese and heavy whipping cream to mixture and pulse until well combined and smooth.
  5. Add salt and pepper to taste.
Gravy
  1. Combine beef stock, heavy whipping cream and butter in a medium saucepan.
  2. Bring to a boil and then reduce to simmer for 10-15 minutes.
  3. Add xanthan gum and pepper. Stir until it thickens to your liking.

  1. In a large saucepan, combine cream cheese and hot sauce over medium heat.
  2. Once melted, stir in the blue cheese dressing and chicken.

  2. Shred the radishes using a food processor (orgrate with grater).

  2. Cut zucchinis in half lengthwise. Using a large spoon, scoop out seeds from the insides, then cut each half into 2-3 pieces.

  1. In a small bowl, whisk together egg, salt and pepper. In a separate dish, combine all dry ingredients and mix.
