  1. Preheat oven to 400°
  2. Cut zucchinis in half lengthwise. Using a large spoon, scoop out seeds from the insides, then cut each half into 2-3 pieces.
  3. Place zucchini pieces on a large baking sheet and toss with oil. Season with garlic powder, salt and pepper. Bake until slightly tender (5-10 minutes).
  4. Remove from oven and add shredded cheese and bacon to each piece.
  5. Return to oven and bake until cheese is bubbly, about 10 minutes more.
  6. Garnish with sour cream and chives and serve immediately.
