Years of unhealthy eating patterns and infrequent exercise led to steady weight gain. I would attempt a diet, lose some weight and do a pretty good job of sticking to it for a while, but would inevitably fall off the wagon and put the weight back on. I continued this trend of yo-yo dieting – up, then down, and back up again – and at my worst point carried 240 pounds on my 5’8” frame… not good.

Then I heard about Keto and decided to give it a try. Of all the diets that I have encountered Keto is by far the easiest to follow. The word “diet” may not even accurately describe the Keto lifestyle because many of the foods I eat would be considered a cheat meal on another diet.

I began my journey in February of 2018 at 235 pounds and just recently weighed in at 198. First time in a long time that I’ve seen the scale dip below 200 and it feels pretty good. I still have some work to do, but Keto has changed my life.

Why do you prefer Keto over other dietary options?
I feel like it is so much easier to follow Keto than other traditional diets I’ve tried. The rich, high fat foods leave me feeling full for longer periods of time, and I end up not even craving carbs like I did in the past.

What is the hardest part of Keto?
For me the hardest part was getting past the taboo of eating more fat. I constantly wanted to revert back to my ‘low-fat” mentality. Once I realized that eating more fat and cutting carbs trained my body to burn fat reserves I was good to go.

What’s your go-to when you need a quick meal on the go?
Anywhere that serves good garlic parmesan wings – high fat and no sugar. You just have to be careful to ask whether the wings are breaded in anything that contains hidden carbs.

What is your favorite meal or recipe from the Keto Diet Menu website?
Well it changes since they constantly update the recipes, but right now I am digging the Easy Crustless Quiche.

Have you ever encountered a plateau? What did you do?

Hitting plateaus are pretty common with any diet. When I encounter one, it usually tells me that my body is getting a little too comfortable with my routine. I try to add some carbs back into my diet for a couple of days to shock my system, then use a 16/8 intermittent fasting schedule when I go back to Keto.

Do you incorporate exercise? How much?
I have found that a little bit of High Intensity Interval Training goes a long way. The best part about it is that it can literally be done anywhere. At a minimum I shoot for 3 days a week at 30 minutes per day and have seen pretty good fat-burning results from it.

Any advice for individuals who are who are new to Keto?
You will drop a decent amount of weight in the first couple of weeks and then slow down. Don’t get discouraged. Trust the process and stick with it. Once your body begins to recognize fat reserves as it’s primary fuel source, you will see amazing results!
