Instructions
  1. Preheat oven to 400.
  2. Grease muffin pan and set aside.
  3. In a large bowl combine all dry ingredients.
  4. In a separate bowl combine eggs, sour cream, and melted butter and mix.
  5. Add wet ingredients to dry. Mix until well combined, but don’t overdo it. you don't want the mixture to be too thin.
  6. Drop spoonfuls of mixture into muffin pan (each well should be about 2/3 full).
  7. Bake for 10-15 minutes or until golden brown. These should last about a week in a ziploc bag in the refrigerator, and reheat well in the microwave.

Instructions
  1. Heat avocado oil in a cast iron skillet over medium-high heat.
  2. Preheat oven to 350°
  3. Season pork loin with salt, pepper and garlic.
  4. Tightly wrap bacon strips around pork loin until completely covered. Place in skillet and sear for approximately 3-4 minutes on each side.
  5. While meat is searing wash and trim asparagus stalks to desired length.
  6. After the loin is thoroughly seared, arrange asparagus stalks in the skillet around loin, and add 2 Tablespoons of ghee.
  7. Cover skillet with foil and place in preheated oven.
  8. Bake for 20-30 minutes or until loin reaches 145°.
  9. Remove from oven and let rest for approximately 10 minutes. Cut loin into 1/2" slices and serve.
