Instructions
  1. Use ghee to coat a skillet over medium heat, then add peppers and zucchini. Sauté until soft.
  2. Add chorizo and cook until browned.
  3. Add kale and cook until kale begins to soften and slightly wilt. Create a pocket in the mixture and add the large egg. Cook until egg is over-medium (or to your preference).
  4. Garnish with diced avocado and cilantro, then serve immediately.

Instructions
  1. Hard boil eggs, then peel and halve. Remove yolks and put in a medium bowl.
  2. Add avocado, mayonnaise, lemon or lime juice, salt and pepper to the egg yolks and mix until smooth.
  3. Spoon mixture into egg white halves and store in refrigerator.

  1. Preheat oven to 350° and spray muffin pan with nonstick oil.
  2. Cook bacon in a skillet over medium-high heat.

  4. Combine beaten eggs, greek yogurt, and cottage cheese in a blender and mix at medium speed until blended well.

  5. Between 12 muffin cups, evenly sprinkle chopped bacon and gruyere cheese in the bottom of each cup.

  6. Evenly pour egg mixture into each muffin cup (approximately 2/3 full in each cup).

  7. Bake for 18-20 minutes @ 350°
  8. Let cool for 5-10 minutes before removing from muffin pan and store in the refrigerator in an airtight container.

  1. Cook bacon in a skillet over medium high heat. Drain and chop, then set aside.
  2. Cut avocado in half, scoop out and chop the flesh, then set aside.
  3. In a medium bowl combine eggs, heavy cream, salt, pepper and garlic powder and beat together.
  4. Scramble egg mixture in a skillet over medium heat, stirring frequently. Sprinkle cheese and chopped bacon throughout and continue to stir.
  5. Mix scrambled egg mixture and chopped avocado together and stuff into avocado shell. Garnish with avocado slices and crumbled bacon and serve immediately.

  1. Preheat oven to 400.
  2. Grease muffin pan and set aside.
  3. In a large bowl combine all dry ingredients.
  4. In a separate bowl combine eggs, sour cream, and melted butter and mix.
  5. Add wet ingredients to dry. Mix until well combined, but don’t overdo it. you don't want the mixture to be too thin.
  6. Drop spoonfuls of mixture into muffin pan (each well should be about 2/3 full).
  7. Bake for 10-15 minutes or until golden brown. These should last about a week in a ziploc bag in the refrigerator, and reheat well in the microwave.

  1. Pre-heat oven to 375 Degrees
  2. Liberally spray muffin tins with non-stick spray or olive oil or line with muffin cups
  3. Beat the 12 eggs with any seasoning and set aside
  4. In the bottom of the muffin tin add any meat or vegetables as well as shredded cheese to fill at least 1/2 of the muffin tin up to approximately 2/3
  5. Pour egg mixture into each tin until about 3/4 filled - stir to mix the ingredients together
  6. Bake approximately 30 minutes checking to see that the egg has set and muffins are risen and browned
  7. Muffins can be stored in the refrigerator for up to 1 week - they can also be frozen.

Instructions
  1. Preheat your oven to 375° and line a large baking sheet with foil.
  2. Cook the sausage in a skillet until browned, then ensure it is drained and chop into smaller pieces.
  3. Combine the eggs, sour cream, butter, salt and garlic in a bowl and whisk. Then slowly add the coconut flour and baking powder and continue to whisk until this mixture is blended well.
  4. Add the browned sausage and cheddar cheese and stir until mixed evenly.
  5. Roll into 20 (approximately 1 inch) balls and place 1/2 inch apart on your baking sheet. Bake for 15-20 minutes or until browned and serve.
