  1. Preheat your oven to 375°
  2. In a medium size pot, melt mozzarella and cream cheese over low to medium-low heat.
  3. In a medium size bowl, combine almond flour, eggs and xantham gum until blended well.
  4. Add melted cheese to this mixture and knead to form a dough.
  5. Divide the dough into 12 even portions and roll into logs.
  6. Fold each log into a bagel shape and place on baking sheet.
  7. Bake for 22-26 minutes @ 375°
  8. Garnish with cream cheese and smoked salmon and serve immediately.
