Instructions
  1. Place Olive Oil in a medium skillet.
  2. Heat on Medium/Low Heat until hot.
  3. Place sliced Zucchini and Squash in hot pan.
  4. Brown for approximately 2 minutes.
  5. Add chopped Onion.
  6. Brown for another minute or 2.
  7. Add sliced Mushrooms.
  8. Brown until vegetables are cooked through.
  9. Add Bacon pieces and stir through the vegetables.
  10. Add shredded cheese on top and let melt through.

This recipe is great to experiment with additional vegetables such as green, yellow, orange or red peppers; asparagus, brussel sprouts, spinach, yellow wax beans, pea pods - let your imagination soar.
