Instructions
  1. Lightly oil a non-stick skillet over medium heat.
  2. Season salmon filet with salt and pepper, then place in skillet with skin down. Cook until the salmon reaches 140° (approximately 12 minutes). Fish should be flaky. Remove from heat and let rest for 5 minutes.
  3. In a salad bowl, combine kale, goat cheese, and walnuts and toss to mix evenly.
  4. Remove skin from salmon filet and place in bowl.
  5. Combine olive oil and apple cider vinegar, drizzle the mixture over salad and serve immediately.
