Instructions
  1. Process Oil, Basil, Mint, Garlic and Pepper in a blender until smooth - about 15 seconds.
  2. Pour mixture over Halloumi Cheese in a medium dish - stir to coat.
  3. Cover and chill for 1 hour.
  4. Preheat grill to high (450 - 500 degrees) or heat a lightly greased grill pan over high.
  5. Add tomatoes to cheese mixture and toss to coat.
  6. Thread Tomatoes, Zucchini, Squash and Cheese onto 8 (8 inch) skewers
  7. Sprinkle with salt
  8. Place kebabs on lightly greased grill grate or in grill pan
  9. Grill uncovered until cheese is lightly charred and vegetables are tender about 1-2 minutes for each side.
  10. Garnish with Basil and Mint leaves if desired.
Recipe Notes

Fold shaved lengthwise Zucchini and Squash end over end as you thread through the skewer
