In Burundi, they often use Mukéké which is a type of Mackerel. The tomatoes and onion make a delicious, brothy sauce. Red palm oil has the added benefit of decreasing cholesterol levels.

Instructions
  1. Cook onion over medium heat until soft.
  2. Add tomatoes, habenero, water, and salt.
  3. Simmer, uncovered, about 15-30 minutes, until the tomatoes break down into a sauce. Adjust cooking time based on your preference.
  4. Add fish, cover, and cook until done. Check with a fork to make sure the fish flakes easily to determine if it's done.
