Ingredients
Instructions
  1. Combine Watermelon, Cucumber, Feta Cheese and Pecans in a large bowl – set aside
  2. Combine Red Wine Vinegar, Shallot, Lemon Juice, Thyme, Salt and Pepper in a medium bowl – Slowly drizzle the Olive Oil, whisking until emulsified.
  3. Toss the Watermelon Mixture with 1/2 of the Dressing
  4. Transfer salad into a Serving Platter
  5. Drizzle remaining dressing throughout salad.
  6. Sprinkle with Mint and Basil Leaves.
Recipe Notes

Dress the salad right before serving to prevent the melon and cucumbers from watering down the vinaigrette.
