Instructions
  1. In a small bowl, mix avocado oil, apple cider vinegar, Chipotle Tabasco, Tajin seasoning, garlic powder and onion powder. Place this mixture and the chicken into a one-gallon plastic freezer bag and place in the refrigerator to marinate overnight (or desired length of time).
  2. When ready to cook chicken, heat grill to medium-high heat and place on grill for approximately 10 minutes or until the chicken reaches 165°. Remove from grill and let rest.
  3. In a medium-size bowl combine egg whites, coconut flour, baking powder and garlic powder and mix until smooth.
  4. While stirring, slowly add water to mixture until the consistency is thin.
  5. Use cooking spray to lightly oil a small skillet over medium heat.
  6. Using a spoon or measuring cup, pour some of the tortilla batter into the skillet and quickly tilt to spread the mixture out (make these as thin as you can).
  7. Cook until the underside of the tortilla begins to turn light brown and flip to cook the other side.
  8. Remove cooked tortilla and set aside. Repeat steps 6-8 until all tortillas have been cooked.
  9. Assemble tacos by filling a tortilla with desired amount of chicken, guacamole, sour cream and cilantro and serve immediately.
Recipe Notes

Many low-carb taco recipes call for egg whites by separating eggs; however, through trial and error we have found that cartons of liquid egg whites will make your tortilla shells hold together much better!
