Instructions
  1. In a medium size bowl, add eggs, psyllium husk powder, and cottage cheese. Mix together and let it rest for 8-10 minutes to thicken the batter.
  2. Melt the butter in a non-stick skillet using low-medium heat. Pour in the batter and fry for 2-4 minutes on each side.
  3. In a separate bowl, add heavy whipping cream. Begin whipping until soft peaks form.
  4. Serve the pancakes with a dollop of whipped cream and fresh berries of your choice.
