Instructions
  1. Pre-heat grill to medium-high 400-450 degrees – or heat a grill pan over medium-high and lightly grease
  2. Cut off the stem end of the Brussels Sprouts and remove any yellowing outer leaves
  3. Place Brussels Sprouts into a large, microwave safe mixing bowl and heat in the microwave on high for 3 minutes
  4. Drain and cool
  5. Combine Salt, Ancho Chile Powder, Paprika, Brown Sugar, Cumin, Dry Mustard, Coriander and Oil in a large bowl.
  6. Add Steak, Onion, Peppers and Brussels Sprouts and toss to coat
  7. Thread mixture beginning with Steak, then Onion, Pepper, Brussels Sprout (stem end facing the same direction) onto 8 (8 inch) skewers until full
  8. Place skewers on lightly greased grill grate or in grill pan
  9. Grill, uncovered, until all vegetables are tender and steak is charred and cooked to desired degree of doneness (about 10 minutes per side for medium) turning occasionally
