Ingredients
Instructions
  1. Chop zucchini and all peppers.
  2. Heat oil in a large skillet over medium-high heat and add vegetables.
  3. Add salt, pepper and spices and cook until vegetables are tender.
  4. Add riced cauliflower and cilantro and heat until rice is soft, stirring occasionally to prevent burning.
  5. Add cooked, chopped chicken thighs and stir lightly to mix.
  6. Serve in bowls and garnish with cheese, guacamole and sour cream.
